Producer Profile

Irma Trochez owns and operates her farm Mi Tesoro in the community of San José de los Andes in Las Vegas, Santa Barbara. Irma comes from a coffee-producing family. In 1986, she married her husband Wil, and together they opened a corner store in the city of Choloma. They dreamed of owning a farm of their own, and in 1998, they traded the property on which their store sat for a bigger plot, now known as Finca Mi Tesoro. The farm totals four hectares and is planted with Parainema and IHCAFE90 varieties. Her Parainema is an excellent example of the complexity and unique profiles possible with the Santa Barbara terroir.

Santa Barbara

Coffee profiles from Santa Barbara are among our favourite, however, the region is anything but easy to grow coffee in. In the high altitudes of Santa Barbara, producers can experience very cold temperatures combined with heavy rainfall that can combine to cause cherries not to ripen and for leaves to die on the tree. These same cold and wet conditions can also make processing very difficult.

Parainema

Parainema is a rust resistant variety is well adapted to medium altitudes, has good quality potential at high altitudes. It is a Sarchimor related variety made by IHCAFE, the Honduran Coffee Institute.

Honey

This honey lot starts by handpicking and selecting the ripest cherries and then floating and de-pulping them that same afternoon. It is then fermented for between 24 hours, and placed to dry on raised beds. Depending on the weather, the drying process lasts from 18 to 21 days.
