Producer Profile

Daniel Sanchez Caldon is a 50-year-old producer and one of the founding members of the Mártir Group. His farm, La Florida, is located at 1,850-1,900 masl in Alto Cañada, La Plata, Huila, on the border with Cauca. At La Florida, Daniel grows Castillo, Gesha, Variedad Colombia, and Pink Bourbon. This washed Pink Bourbon lot stood out to our head roaster on the competition tables at Copa de Oro this past season. Though it did not advance past round two, it is very juicy and vibrant, showing classic Pink Bourbon character.

Huila

Of the many growing regions in Colombia, the mountainous department of Huila in the south west of the country grows the most coffee. Huila enjoys a wide diversity of micro-climates, temperatures, altitudes and coffee varieties. In fact, coffee is grown in 35 of Huila's 37 municipalities. All of this means that the coffee coming out of this region is as diverse as the variables that influence its production.

Pink Bourbon

Initially thought to be a natural hybrid of Red and Yellow Bourbon, this variety, famed for its characteristically pink ripened cherries and equally unique flavour characteristics, has become highly sought after. It has now been genetically confirmed that Pink Bourbon is in fact an Ethiopian Landrace variety. On our trips to Colombia, we've seen the variety proliferate across Colombia, particularly in Huila, where it has become extremely popular amongst specialty focused coffee producers.

Washed

Hand-selected at peak ripeness, then fermented intact in plastic barrels for 48 hours, after which the cherry was de-pulped and further fermented for another 48 hours, rinsed and dried on raised beds inside a parabolic style greenhouse dryer for 30 days
