Ricaurte Quiacha

Finca La Nueva Campoalegre which sits at 1,750 masl is located in Garzón, Huila, Colombia. It is owned and run by Ricaurte Quiacha. Totalling five hectares, the farm is planted with two hectares of Tabi with the remaining three hectares divided between cattle pasture and forest reserve. Ricaurte is a fourth-generation coffee producer. He purchased a plot of his father’s land when he was a young man, determined to carry on the family tradition of coffee farming. He has lived there for the last 40 years. During the harvest, Ricaurte typically works from six in the morning until seven at night alongside the eight pickers he hires.

The farm has provided for my family," Ricaurte said, "now that my children are older and pursuing their own goals away from the farm, I plan on improving my coffee processing facilities and my home because this is happiness to me, and coffee will continue to provide that."

We had the pleasure of visiting Ricaurte’s farm back in November, 2022 and his passion was evident to us as he showed us his farm, his marquesina, parchment and fermentation tank. This year, Ricaurte experimented with adding yeast, which he acquired from our importing partner Quest, to his fermentation. He de-pulps and then ferments his coffee in water, with the added yeast, for 72 hours. This small lot totalling three 70kg bags turned out exceptionally, and we purchased all three bags. The yeast-inoculated fermentation adds a juicy, full-bodied sweetness to the cup, without throwing the profile out of balance with over-fermentation notes. We are pleased to offer Ricaurte’s coffee as a Subtext Reserve coffee given its small lot size, experimental processing and exceptional cup quality.

Of the many growing regions in Colombia, the mountainous department of Huila in the south west of the country grows the most coffee. Huila enjoys a wide diversity of micro-climates, temperatures, altitudes and coffee varieties. In fact, coffee is grown in 35 of Huila's 37 municipalities. All of this means that the coffee coming out of this region is as diverse as the variables that influence its production.

Developed by Cenicafe in the early 2000's as part of their effort to combat coffee leaf rust, Tabi resulted from the crossing of Timor hybrid, Bourbon and Typica varieties. Tabi grows tall and can produce either yellow or red cherries.

Yeast Inoculated Washed

De-pulped, fermented in water with added yeast for 72 hours. The coffee is then washed and dried for 5-15 days in Ricaurte’s marquesina (covered greenhouse).
