Diva Maria Monje

Producer Profile

Diva Maria Monje has grown coffee at her Finca Las Palmas for 13 years. Working alongside her husband Abraham and their 21-year-old son Eyder, she grows seven varieties of coffee, as well as plantains and yucca on two and a half hectares, at 1,690 masl in Sauza, Huila. This is the first year Diva has placed within the top 15 lots in Osito's annual competition, taking third place in the Central regional division. Her winning washed Aji was brought in from the field, de-pulped, and fermented between 60 to 80 hours in a tank, then rinsed and dried on a parabolic-style greenhouse dryer for 15 days. The resulting cup is incredibly complex, juicy, and sweet.

Huila

Of the many growing regions in Colombia, the mountainous department of Huila in the south west of the country grows the most coffee. Huila enjoys a wide diversity of micro-climates, temperatures, altitudes and coffee varieties. In fact, coffee is grown in 35 of Huila's 37 municipalities. All of this means that the coffee coming out of this region is as diverse as the variables that influence its production.

Aji

IThough it is often called Bourbon Aji, this variety—more aptly named Aji—has been discovered to be genetically distinct from Bourbon and is most likely an Ethiopian landrace variety like Pink Bourbon, Sidra, and Chiroso. It is known for having a ‘spicy’ cup profile, hence its name, which is Spanish for chili pepper.

Washed

Diva's winning washed Ají was brought in from the field, de-pulped, and fermented between 60 to 80 hours in a tank, then rinsed and dried on a parabolic-style greenhouse dryer for 15 days.
