Anibal Alarcon

La Palestina is the largest farm in the Origin Coffee Lab (exporter) network, with 11 hectares split across 7 parcels. The farm was founded by the parents but the Alarcon brothers now run it and manage their respective lots. During the harvest, they collectively pick and process coffees in order to maximize efficiency. They each have their own specializations within the cultivation and processing chain. Overall this has led to very consistent results in quality while opening doors for experimentations. Anibal's 100% Bourbon lot is certified organic. His main responsibility on the farm is the meticulous fermentation of the coffees, but he is also heavily involved with the planting and management as well.

Cajamarca

Cajamarca is a department in northern Peru, ensconced by the Andean mountain range. There is a vast diversity of flavour profiles coming out of the many micro-regions within Cajamarca. Across the department, smallholder producers make up the majority of production.

Bourbon

Bourbon takes its name from Bourbon Island (now La Réunion), where it was introduced by French missionaries who had taken a few coffee seeds from Yemen in the 1700s. Along with Typica, Bourbon accounts for the basis of most of the world's coffee production today which is made up of Bourbon and Typica descendant varieties. Bourbon is known for its high-quality potential, susceptibility to disease and relatively low yields.

Washed

Wet fermented for 72 hours, fully washed and dried on raised beds for 12-15 days.
