Calixto Quispe

This is our first coffee from the Puno department in Southern Peru, and one that we are very excited about. This washed Bourbon from Calixto Quispe is sweet, elegant and floral, reminding us of some of our favourite Ethiopian coffees. In the cup we find jasmine, stone fruit and deep sweetnes reminiescent of maple syrup.

Puno & Calixto Quispe

Over the past few years we've tasted a handful of Puno coffees from some roasters we admire. They all stood out to us from other Peruvian coffee. The profile of these Puno coffees often show lots of florality, stone fruit and other notes reminiscent of Ethiopian landrace varieties. The Sandia valley in Puno has a somewhat unique coffee story. Historically, coca cultivation has been common in the Sandia valley due to quick its quick turanaround time and high profitability. In the 1980's, the UN decided to introduce a strain of the Bourbon variety to the Sandia valley in an attempt to displace coca cultivation by encouraging farmers to grow coffee instead. To this day however, coffee production has been in decline in Puno and coca cultivation remains. The UN's seed program did have the effect of leading to the very unique cup profile you can find in the region, with coffee producers in Puno continuing to work with some of the oldest Bourbon tress in Peru.

This washed Bourbon lot from Calixto Quispe, who farms a small parcel of land (the average farm size in Puno is just under 2.5 hectares) at 1,900 masl is an excellent example of the unique Puno Bourbon cup profile.

Due to the recent political unrest in Peru, neither Origin Coffee Lab (exporter) or Apex (importer) were able to travel to reach Calixto'sfarm recently.


Puno is located in Southern Peru and is dominated by the Andes, which make up 70% of the region's land, with the rest being covered by the Amazon. Rich soils, staggering altitudes and unique varieties all add to the complexity of coffees from Puno.

Field Blend

Bourbon takes its name from Bourbon Island (now La Réunion), where it was introduced by French missionaries who had taken a few coffee seeds from Yemen in the 1700s. Along with Typica, Bourbon accounts for the basis of most of the world's coffee production today which is made up of Bourbon and Typica descendant varieties. Bourbon is known for its high-quality potential, susceptibility to disease and relatively low yields.


26 hour, in-cherry dry fermentation prior to washing. The coffee is then dried for 15 days.
