Producer Profile

It has been five years since Alirio’s Pink Bourbon first graced our menu. Every year, we have looked forward to his coffee, and have been happy to roast each new Pink Bourbon harvest, and taste his other varieties as they’ve become available. This harvest, however, marks our biggest season of Alirio’s coffee to date, with seven exceptional single-variety microlots hitting our menu, five of which are exclusive to Subtext. Alirio, his wife Anayibe, and their children oversee three different farms in Bruselas, Huila: El Roble, El Diviso, and El Meson. They grow Pink Bourbon, Red Bourbon, Sidra, Caturron, Chiroso, Aji, Pacamara, and more. They fertilize their farms with homemade organic compost as they strive for a more sustainable, and biodynamic form of agriculture. In addition to coffee they grow plantain, beans, and corn, which they sell on the local market. We hope you’re just as excited to taste Alirio’s harvest as we are to share it with you.

For best results we recommend resting your filter coffee for two to three weeks post-roast before brewing.

 


Huila

Of the many growing regions in Colombia, the mountainous department of Huila in the south west of the country grows the most coffee. Huila enjoys a wide diversity of micro-climates, temperatures, altitudes and coffee varieties. In fact, coffee is grown in 35 of Huila's 37 municipalities. All of this means that the coffee coming out of this region is as diverse as the variables that influence its production.

Caturron

Recent genetic testing by Tim Wendelboe has suggested that Caturron is hybrid of a Timor hybrid and either Caturra or Bourbon. It is resitant to coffee leaf rust and has a distinctive shape and flavour profile.

Washed

Alirio starts with a 28 hour in-cherry fermentation before de-pulping the coffee. Then, it is held for another 36-72 hour fermentation in plastic containers. The coffee is then washed, and dried for 20 days.
