In our second year buying coffee from Sebastian, we purchased three distinct micro-lots from his Finca Terrazas del Pisque, including this Pacamara lot! Finca Terrazas del Pisque is located in Pichincha, Quito, Ecuador, and is managed by Sebastian Garcés, alongside Arnaud Causse. The farm has established itself as an incubator of elusive and exotic coffee varieties and is focused on regenerative agriculture having implemented a full stop to chemical inputs. They keep different animals on the farm including chickens to help mitigate larvae, peilbuey sheep to help graze and fertilize, and bees for pollination. Additionally, they create their own charcoal using fallen branches.
Pichincha province, in northern Ecuador is home to Quito, the nation's capital Coffee production in Pichincha surrounds the capital, and benefits from high altitudes as well as volcanic soils on the slopes of Pichincha volcano.
A hybrid of Maragogype and Pacas originating in El Salvador. Pedigree selection has never been finalized and as such the variety is not stable from generation to generation. Nonetheless, Pacamara - known for its large seed size and exceptional quality potential - consistently dominates Cup of Excellence competitions. Unfortunately, Pacamara is highly susceptible to Coffee Leaf Rust.
Sebastian picks the ripest of cherries for his washed lots, floats them to remove over/under-ripes and then washes them with clean water. After rinsing, the coffee is de-pulped and left to ferment in tanks for 48 hours. The coffee is then dried in African beds for 15–18 days, depending on the weather.
