We're very excited to have Buncho back on the menu after a couple of years. We fondly remember this lot from back in 2021 as one of our favourites, so we jumped at the opportunity to bring it back this season through our friends at Quest. Shantewene Buncho Station is owned and operated by Daye Bensa, the COE-winning exporter we have been buying coffee from for several years now. We're enamoured with the high-altitude coffees of Sidama, which can reach up to 2,300 masl, and this gorgeous honey lot is a great example of why. Buncho is made up of cherry primarily from the 74158 variety, collected from approximately 940 producers around Shantawene village.
One of our favourite micro-regions in the world, Bensa is situated in the Sidama region of Southern Ethiopia. Bensa is characterized by diverse landscapes, including highlands, lowlands, and valleys. Is is known for its rugged terrain and elevated plateaus.
74158 is one of six selections that were approved for release in 1974 as part of a CBD-resistance (Coffee Berry Disease) selection program. During the 1970's, researchers from the Jimma Agricultural Research Centre searched the forests in the Illuababora zone for CBD-resistant mother trees. Today 74158 is heavily propagated in South Western Ethiopia, and is one of two dominant varieties in Bensa, along with 74112.
Once the cherries arrive at the Buncho Station, they are placed in water for sorting and removing floaters. The cherries are then de-pulped and laid to dry with its mucilage on raised African beds. To ensure an even drying, the parchment is constantly moved each day, taking 12-15 days, depending on the weather, until reaching the desired humidity.
