    Producer Profile

    Emerson Felipe Narvaez grew up in Policarpa, Nariño, learning about the land and watching his father produce coffee. However, Emerson did not plan to grow coffee himself. Instead, he worked various jobs as a builder, soldier, and baker before eventually being drawn back into coffee. He was introduced to specialty coffee by a local co-op, and he immediately fell in love with coffee, and became a Q grader. Eventually, he bought his own parcel of land to start Finca El Turpial. This is the highest farm we've ever bought from, with altitudes ranging from 1,950 to 2,850 masl. A unique microclimate that sends warm winds up the mountain allows him to grow his coffee at high altitudes that are usually inhospitable to coffee. Emerson experiments with many varieties at El Turpial including Laurina, SL28, Pink Bourbon, and Gesha. This season we selected two of Emerson’s coffees, including this excellent natural anaerobic Laurina. This is our first time working with this naturally low-caffeine variety.

    For best results we recommend resting your filter coffee for two to three weeks post-roast before brewing.

     


    Nariño

    Nariño is characterized by steep slopes, and extremely high altitudes as well as a unique climate. Warm, humid air makes its way up from the valleys during the evening hours, allowing for coffee to be grown at higher altitudes than in the rest of Colombia, without risk of frost. Producers are small, biodiversity is traditional, soils are nutrient rich and well-drained.

    Laurina

    Laurina is a rare and distinctive variety known for its notably low caffeine content. A mutation of Bourbon, Laurina contains about 50-60% less caffeine than other Arabica coffee. The plants are relatively small, making them easier to manage and harvest, and they thrive at high altitudes.

    Natural Anaerobic

    After picking, the whole cherries are placed in GrainPro plastic bags that block both oxygen and light, creating a controlled anaerobic environment. This phase lasts ten days and is carried out with the cherries kept fully intact. Throughout this time, the bags are moved and handled periodically to ensure an uniform fermentation.

    Once the fermentation is complete, the coffee is dried for three days in direct sunlight, spread out on black plastic sheets to facilitate water drainage. Finally, the coffee is transferred to raised drying beds, where it dries under the sun for approximately eighteen days.
