We’re happy to bring back Edilizar “Edi” Ordoñez Mazariegos’ coffee back to our menu for another season. Edi, is coffee producer from the Amatenango de la Frontera municipality in Chiapas, right on the border with Guatemala. He comes from a family of coffee producers, in fact, we have worked with both his father Luis and his brother Rony’s coffees in past seasons too. Their farm is planted with a number of varieties, including Catuai, San Ramon, and Villa Sarchi, all of which are represented in this field blend. Edilizar has previously worked as an arborist in the US, gaining skills he uses on the farm, carrying out year-round pruning, stumping, fertilizing, and weeding.

For best results we recommend resting your filter coffee for two to three weeks post-roast before brewing.
Chiapas, which shares a border with Huehuetenango, Guatemala, produces the most coffee of any of Mexico's states, at 40% of the country's yield. Given Chiapas' proximity to Huehuetenango, there is obviously high quality potential for this region with its high altitudes, favourable climate and volcanic soils.
Catuaí is the result of a genetic cross between Yellow Caturra and Mundo Novo, made by the Instituto Agrinomico of Sao Paulo, in Brazil. While it was first bred in 1949, it was released in Brazil in 1972. It comes in both red and yellow variations, and there are multiple genetic lines available in Brazil. Some of these lines are known for high output. Generally, Catuaí is known for its good quality potential at high altitudes and small size, which allows for greater planting density. This planting efficiency contributed to the intensification of full sun planting in Central America during the 70's & 80's. Unfortunately, Catuaí is highly susceptible to coffee leaf rust.
Sarchimor not a single variety, but rather a group of distinct varieties with similar parentage (Timor Hybrid CIFC 832 & Villa Sarchi). Parainema, and Cuscatleco are both pedigree selections of T5296 (Sarchimor group). Sarchimors are bred to be resistant to leaf rust, and are tolerant of coffee berry disease. They have good yields, and good quality potential at low to medium altitudes.
