Green Spring

Producer Profile

Green Spring is a collaboration between Ture Waji and Mike Mamo, both of whom we have been buying coffee from for years. Green Spring is located in the kebele of Sonkolle Kallato in Guji where it sits at elevations of 2,200 to 2,350 masl. The station collects cherry from neighbouring producers who primarily grow Gibirinna (74110) and Serto (74112). As we'd expect from a collaboration between Ture and Mike, Green Spring pays careful attention to process-ing. Cherry is dried on raised beds for 21-28 days, with regular use of a moisture meter to determine when lots are properly dried.

Brewing Green Spring

Recommended Use:  FILTER

Where to Grind: Start at a coarse setting within our recommended grind range*

*Refer to our Grind & Brew Guide for recipes and grind setting ranges tailored to specific grinders and brewers.

For best results we recommend resting your filter coffee for two to three weeks post-roast before brewing.

Guji

This famous coffee growing region is known for its rich, volcanic soil. High altitudes, bi-modal rainfall patterns and dry weather which allows for coffee to develop slowly and consistently here.

Gibirinna & Serto

Short and compact with small leaves, cherries, and beans; Gibirinna 74110 is one of the most planted varieties in Ethiopia. The mother tree of this variety was selected in 1974 by JARC (Jimma Agricultural Research Centre) in the Metu province for its CBD resistance. After research and development by JARC, it was released in 1979 and recommended for planting in the altitude range of 1,500-2,100 masl.

Serto 74112 is one of six selections that were approved for release in 1974 as part of a CBD-resistance (Coffee Berry Disease) selection program. During the 1970's, researchers from the Jimma Agricultural Research Centre searched the forests in the Illuababora zone for CBD-resistant mother trees. Today 74112 has been widely distributed across most growing regions in the country.

Natural

Drying at Green Spring is conduc ted on raised beds and typically takes 21–28 days , with careful
and regular use of a moisture meter to determine when lots are fully dried.
