After sourcing coffee from Mexico for five years, we finally had the opportunity to visit Oaxaca this past March. On our way to a cupping at Red Beetle's cupping lab, we stopped on the roadside to take a look at some Pink Bourbon plants growing on the hillside in Loxicha. The plants, we were told, were being grown by a young producer named Rogelio Santiz. We ended up cupping four tiny Pink Bourbon lots from his farm later that afternoon and while all four were delicious, they were too small to export on their own. Luckily, Red Beetle Coffee Lab helped us by combining all tour into one small micro-lot, exclusive to Subtext. We are very excited to share this lot and look forward to seeing how his Pink Bourbon develops over further harvest seasons.

Sitting right in between Mexico’s two other major coffee-growing regions Chiapas and Veracruz, Oaxaca produces some of the most distinctive coffees in Mexico. Coffee production in Oaxaca has not been modernized to the same extent as in its neighbouring regions, with many producers preferring traditional cultivation methods and coffee varieties. Most farms are passively organic, and many are forested.
This variety, famed for its characteristically pink ripened cherries and equally unique flavour characteristics, has become highly sought after. It has now been genetically confirmed that Pink Bourbon is in fact an Ethiopian Landrace variety. On our trips to Colombia, we've seen the variety proliferate across Colombia, particularly in Huila, where it has become extremely popular amongst specialty focused coffee producers.
