Producer Profile

I

In our fifth year working with coffee from Luis Alberto's farms in Nueva Segovia, Nicaragua, we selected two Pacamara lots from his Finca La Bendicion. With 42 hectares of planted coffee at la Bendicion, Luis grows many variteties, including Caturra, Catuai, Maracaturra, Villa Sarchi, and more. This is actually the first year we were able to purchase a washed lot from Luis, and it really blew us away on the cupping table. Luis produces washed, honey, and natural lots, all processed at his Benificio Las Segovias, where he dries his coffee carefully, and slowly on covered drying beds.

Brewing Luis Alberto's Washed Pacamara

Recommended Use:  FILTER

Where to Grind: Start at a medium-coarse setting within our recommended grind range*

*Refer to our Grind & Brew Guide for recipes and grind setting ranges tailored to specific grinders and brewers.

For best results we recommend resting your filter coffee for two to three weeks post-roast before brewing.

Nueva Segovia

Nueva Segovia is one of only five coffee growing regions in Nicaragua, all of which are located close together in the northern reaches of the country. Neuva Segovia enjoys relatively high altitudes for Nicaragua, which help insulate it from the suboptimal weather and heat that predominate in the country's lower altitude regions.

Pacamara

A hybrid of Maragogype and Pacas originating in El Salvador. Pedigree selection has never been finalized and as such the variety is not stable from generation to generation. Nonetheless, Pacamara - known for its large seed size and exceptional quality potential - consistently dominates Cup of Excellence competitions. Unfortunately, Pacamara is highly susceptible to Coffee Leaf Rust.
