Producer Profile

Way back in 2021, prior to the existence of the Copa de Oro Competition, we went down to Huila to help judge its precursor competition, Copa de Occidente. The winner of that competition was Fredy Rodriguez, with his exceptional Colombia & Castillo field blend. Since then, we’ve been wishing to bring his coffee back. This season, we worked with Osito to bring in his family’s field blend! The Rodriguez brothers (Jose Fredy, Aldemar, and Samuel) are second-generation producers and have been working their farm in La Plata since they were children. They are also founding members of the Martir Group (along with Didier Pajoy). They grow several varieties on their farm, but this lot is a field blend containing Colombia, Caturra, Pink Bourbon, Tabi, and Typica.

Huila

Of the many growing regions in Colombia, the mountainous department of Huila in the south west of the country grows the most coffee. Huila enjoys a wide diversity of micro-climates, temperatures, altitudes and coffee varieties. In fact, coffee is grown in 35 of Huila's 37 municipalities. All of this means that the coffee coming out of this region is as diverse as the variables that influence its production.

Ripe cherries are har ves ted, floated and fermented in plastic tanks . The cherries are then pulped before the par chment i s fermented again. Once
fermentation is complete, the coffee is washed and then dried for around 20-30 days .
