Producer Profile

Jose Gomez is second-generation coffee producer who owns and operates his farm, El Paraiso, in Vereda El Naranjal of Buesaco, Nariño in partnership with his father. El Paraiso was one of the first farms in Buesaco to grow coffee. This is the third season we have purchased coffee from Jose and had the pleasure of spending time with him on his farm this past summer. In recent years, under Jose's leadership, the farm has become more well-known, with a focus on growing varieties like Gesha, Caturra, Java, and more. Processing is overseen by Jose's farm manager and childhood friend Carlos Alberto. This honey Pink Bourbon lot underwent numerous processing stages including 6-7 day anaerobic in-cherry fermentation, mechanical depulping,and two phases of drying.

Nariño

Nariño is characterized by steep slopes, and extremely high altitudes as well as a unique climate. Warm, humid air makes its way up from the valleys during the evening hours, allowing for coffee to be grown at higher altitudes than in the rest of Colombia, without risk of frost. Producers are small, biodiversity is traditional, soils are nutrient rich and well-drained.

Pink Bourbon

Initially thought to be a natural hybrid of Red and Yellow Bourbon, this variety, famed for its characteristically pink ripened cherries and equally unique flavour characteristics, has become highly sought after. It has now been genetically confirmed that Pink Bourbon is in fact an Ethiopian Landrace variety. On our trips to Colombia, we've seen the variety proliferate across Colombia, particularly in Huila, where it has become extremely popular amongst specialty focused coffee producers.

Anaerobic Honey

Hand picked at peak ripeness, density sorted by flotation. Selected cherries are sealed inside pastic tanks for 6-7 days of anaerobic fermentation. Cherries are mechanically depulped without the use of water to maintain mucilage. Drying is carried out in two phases, first drying on raised beds for 3-4 days, then mechanically dried for 1-2 days.
