Producer Profile
Finca Arashi is located in Saraguro, Loja, Ecuador, and is managed by Abel Salinas, a 58-year-old, first-generation coffee grower and the fifth out of twelve siblings. The farm sits at an elevation of 1,890 m.a.s.I. and consists of 7 hectares of land. Abel has around 22,000 coffee trees in production and the majority of the those are Mejorado variety. However, Abel also grows some Sidra and H1 Hybrid. Abel has only been producing coffee since 2016 but is now renowned in Loja from winning the 2021 Ecuador Cup of Excellence Competition. This Mejorado lot shows so much of what we love about the variety. We've now been working with Abel's Mejorado for four years and look forward to it every season.
*Refer to our Grind & Brew Guide for recipes and grind setting ranges tailored to specific grinders and brewers.
For best results we recommend resting your filter coffee for two to three weeks post-roast before brewing.
Loja province is located in the South of Ecuador and boasts high Andean altitudes of up to 2,250 masl. Situated between the Amazon basin and the Sechura desert, the province is blessed with many different microclimates including alpine tundras, cloud forest, and jungles. Loja accounts for about 20% of Ecuador's Arabica coffee production, with the region's mountainous geography and diverse microclimates, providing immense potential for high-quality coffee.
Often called Typica Mejorado, genetic testing done by World Coffee Research has shown that Mejorado is in fact a cross between Bourbon and an Ethiopian Landrace variety. The vast majority of Mejorado is farmed in Ecuador where it has exceptional quality potential, often showing intensely aromatic florals and deep sweetness.
Abel starts his Mejorado Washed lot by de-pulping and then dry-fermenting the coffee for 24 hours. Upon washing the coffee, he then immediately places it to dry for 15 days in a greenhouse structure
