In January of last year, we had the opportunity to travel to Gedeb, Ethiopia where we spent a few days with SNAP coffee and visited a number of their stations in the region. Among those stations was Chelbesa Danche, located in the Chelbesa Kebele. About 800 producers deliver cherry—primarily Kurume and Wolisho varieties—to this station, where processing is overseen by Frew, the Special Prep Coordinator and Yirgacheffe Operations Manager. They produce a number of different processes at Danche. This particular coffee is a washed lot, that underwent 96 hours of dry fermentation prior to washing and drying.

For best results we recommend resting your filter coffee for two to three weeks post-roast before brewing.
Gedeb is one of four coffee growinf woredas (districts) in the Gedeo zone, which also includes the famous Yirgacheffe woreda. As in other Ethiopian regions, farm sizes here are very small, and they are planted mostly with JARC varieties.
Kurume & Wolisho are JARC (Jimma Agricultural Research Centre) varieties. JARC developed these varieties in response to a devastating wave of Coffee Berry Disease (CBD) in the 1960s. These varieties were bred to be resistant to CBD.
Once cherries arrived at the Station, they are placed in water for sorting and removing floaters. Cherries are then de-pulped, dry-fermented for 96 hours and washed to remove the mucilage. The parchment is then laid out to dry on raised beds for 12- 14 days.
