Hamasho Borena

Producer Profile

We’ve been buying coffee from Daye Bensa’s Hamasho station for years now, but this is the first time we have purchased their anaerobic washed lot. About 161 producers who live in the surrounding villages of Hamasho Borena and Bombe Chilaka contribute cherry to the station. The elevations around the station reach up to 2,300 masl, and this results in very dense beans of smaller screen sizes. These extreme altitudes also combine with a sunny climate, volcanic soils, cool nights, and dense vegetation. This lot underwent 72 hours of anaerobic fermentation post-depulping, before being washed and slowly dried on raised beds for 10 to 13 days.

Brewing Hamasho Borena

Recommended Use:  FILTER

Where to Grind: Start at a coarse setting within our recommended grind range*

*Refer to our Grind & Brew Guide for recipes and grind setting ranges tailored to specific grinders and brewers.

For best results we recommend resting your filter coffee for two to three weeks post-roast before brewing.

Sidama

One of our favourite micro-regions in the world, Bensa is situated in the Sidama region of Southern Ethiopia. Bensa is characterized by diverse landscapes, including highlands, lowlands, and valleys. It is known for its rugged terrain and elevated plateaus.

Walega

7Walega 4158 is one of six selections that were approved for release in 1974 as part of a CBD-resistance (Coffee Berry Disease) selection program. During the 1970's, researchers from the Jimma Agricultural Research Centre searched the forests in the Illuababora zone for CBD-resistant mother trees. Today 74158 is heavily propagated in South Western Ethiopia, and is one of two dominant varieties in Bensa, along with 74112.

Anaerobic Washed

This lot underwent 72 hours of anaerobic fermentation post-depulping, before being washed and slowly dried on raised beds for 10 to 13 days.
