Mohamed's coffee returns to our menu for the fourth season in a row, and we are as pleased as ever with his clean and sweet naturally processed Gibirinna 74110 lot. Mohamed's 35.7-hectare farm is located in the Omafuntulay Kebele of Jimma. His coffees come from a stagger- ing 2,000-2,100 metres above sea level and are dried on raised beds for roughly 20 days. Mohamed is a member of the Tokuma group of producers, with whom we had the pleasure of meeting in Ethiopia last year. Mohamed's coffee is a great example of both the cup quality and cleanliness possible in well-processed and dried naturals coming out of Jimma.

For best results we recommend resting your filter coffee for two to three weeks post-roast before brewing.
Jimma, located in Southwestern Ethiopia is the fourth largest coffee producing region by volume. Altitudes range from 1,400 to 2,200 masl. Much of coffee growing in Jimma takes place in semi-forested gardens, and the traditional sun-dried natural process is by far the most common processing method in the region.
Short and compact with small leaves, cherries, and beans; Gibirinna 74110 is one of the most planted varieties in Ethiopia. The mother tree of this variety was selected in 1974 by JARC (Jimma Agricultural Research Centre) in the Metu province for its CBD resistance. After research and development by JARC, it was released in 1979 and recommended for planting in the altitude range of 1,500-2,100 masl.
