Producer Profile

Rosendo Domingo is a second-generation coffee farmer who owns a few small parcels of land in Petatán, Huehuetenango.

His family began producing coffee some 30 years ago, and Rosendo himself trained as an agronomist. This combination of agronomic training and a long background in coffee production allows him to effectively put into use best practices on his farms. This particular lot comes from his farm Palanch'en, which, in the Popti language translates to 'face of a horse.' The farm is named after a large rock that resembles a horse's head.

We had the pleasure of visiting Rosendo back in February last year. He was gracious enough to allow us to film a short interview with him which you can see above.

Since then, Rosendo has actually emigrated out of Guatemala to earn more money for his family. While coffee production on Rosendo's farms has always been a family effort, even more has now fallen to Evelim Alvarado.

For best results we recommend resting your espresso for three weeks post-roast before brewing.

** We do not recommend using this coffee with Breville espresso grinders. These grinders are tested with darker coffee and do not always have the motor power to handle lighter roasted coffee at an espresso grind.  


Huehuetenango

Huehuetenango is the highest growing region in Guatemala and is one of only three non-volcanic soil regions in the country. Its clay soils and heavy rainfall make it an ideal environment for high-quality coffee production.

Caturra & Pache

A natural mutation of Bourbon, originally discovered in Brazil in the early 20th century; Caturra derives its name from the Guarani word for “small,” a reference to its diminutive stature that results from a single-gene mutation causing dwarfism. It was this small size- allowing for more trees to be planted closer together- that led to mass selections of Caturra being made by the Instituto Agronomico (IAC) of Sao Paulo State in Campinas in the 1930’s. Caturra then made its way to Guatemala during the 1940’s and then was widely adopted in the 1970’s by the rest of Central America, where it is now one of the most economically important varieties.

Originally discovered in Santa Rosa, Guatemala in 1949, Pache is a natural mutation of Typica with a single gene that causes dwarfism, allowing it to be planted in greater density and achieve higher yields. With good quality potential at high altitude, Pache is unfortunately highly susceptible to Coffee Leaf Rust, CBD, and Nematodes.
