Producer Profile

La Palestina is an 11 hectare farm that sits at altitudes of about 1,700-1,800 masl in Jaén, Peru. It is owned and operated by the Alarcon family, a cornerstone of the specialty coffee growing community in San Jose de Alto. Originally founded in 1976, by Don Jose Alarcon and Doña Zobeida Coronel, they were attracted to the region by rich soil and ideal growing conditions. Today, the farm is managed by two of their sons. Subtext has been buying their Bourbon for a number of years now. In recent years, they have also planted SL9 and Gesha, and have begun experimenting with honey processing.

Jaén

Jaén, located in the Cajamarca region of Peru boasts high altitudes and a variety of microclimates. Here in the Andes, organic fertilization is common.

Bourbon

Bourbon takes its name from Bourbon Island (now La Réunion), where it was introduced by French missionaries who had taken a few coffee seeds from Yemen in the 1700s. Along with Typica, Bourbon accounts for the basis of most of the world's coffee production today which is made up of Bourbon and Typica descendant varieties. Bourbon is known for its high-quality potential, susceptibility to disease and relatively low yields.

Washed

After harvesting, the cherries undergo a flotation process to remove any defects or unripe cherries. This is followed by a wet fermentation in tanks for 24 to 28 hours, enhancing their natural taste. Following fermentation, the cherries are depulped and meticulously washed to eliminate any remaining mucilage, ensuring a clean, vibrant profile. The beans are then laid out on raised beds to dry gradually over 15 to 25 days.
