Elias Pérez Méndez

Producer Profile

Elias is a second generation coffee producer in the town of Cipresales, San Antonio Huista, in Huehuetenango. Elias manages the farm that he inherited from his parents in 2020. The farm has been in the family since 1990. The parcel already had coffee planted on it, but Elias started to sow more intensively and improve farming practices. Higher prices in recent years have allowed Elias to to remain in the trade—which was not a foregone conclusion given many years of coffee prices paired with high operation costs—and to purchase more land for his farm and improve his house. They call the original parcel La Montaña, because when his father first started working on it, he could see the nearby mountains from the plot.

Huehuetenango

Huehuetenango is the highest growing region in Guatemala and is one of only three non-volcanic soil regions in the country. Its clay soils and heavy rainfall make it an ideal environment for high-quality coffee production.

Caturra

A natural mutation of Bourbon, discovered in Brazil in the early 20th century; Caturra derives its name from the Guarani word for “small,” a reference to its diminutive stature that results from a single-gene mutation causing dwarfism. It was this small size- allowing for more trees to be planted closer together- that led to mass selections of Caturra being made by the Instituto Agronomico (IAC) of Sao Paulo State in Campinas in the 1930’s. Caturra then made its way to Guatemala during the 1940’s and then was widely adopted in the 1970s by the rest of Central America, where it is now one of the most economically important varieties. At high altitudes Caturra has strong quality and yield potential but unfortunately, is quite susceptible to disease.

Washed

The coffee that is harvested during the day is moved to the small depulper where it is deposited into a receiving tank. The coffee with mucilage is left in cement tanks so that the fermentation process takes place with no added water. They wash the coffee in tanks and then the coffee is moved to the drying area. Drying is done on plastic sheets, the sheets are cleaned and the coffee is spread over them, and they try to leave layers of 10 to 12 centimeters in thickness. It is constantly moved with appropriate rakes so as not to damage the coffee beans, during the drying days the coffee mass must be moved to ensure thorough and even drying.
