Producer Profile

Heber Hernán Ávila owns and operates his farm; Finca Las Moras, at 1,600 to 1,800 masl in Guajiquiro, La Paz, Honduras. Heber is a 39-year-old, third-generation producer. Both his father and grandfather were coffee producers, and while the farm is a family inheritance, Heber expanded Las Moras by acquiring neighbouring land. At 4.2 hectares, Las Moras is planted with IHCAFE 90 and Catimor, along with Sidra and Pacamara. Heber takes a sustainable approach to coffee production, ensuring nothing goes to waste and focusing on reducing the farm’s water consumption

La Paz

The department of La Paz is the most famous coffee growing region in Honduras. It also has the most developed specialty coffee infrastruce in the country, and is home to the Montañas de La Paz, which provide high altitudes.

Sidra

Genetic testing done by World Coffee Research classifies Sidra as an Ethiopian Landrace Variety. There is some indication that there is more than one genetically distinct variety being called Sidra in Ecuador. Sidra is famed for its floral structure, deep sweetness and prominent acidity.

Washed

Cherries are hand-picked, de-pulped on the same day and left to ferment in concrete tanks for 10 to 12 hours. The wet parchment is then washed and laid in thin layers to dry on raised beds, with constant movement every 30 to 40 minutes to ensure uniform drying – Usually taking up to 14 days, depending on the weather.
